Ingredients
1 & 1/2 cups All Purpose Flour OR Gluten Free 1-1 Baking Flour
1 tsp baking powder
1 teaspoon baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 pinch (shake) nutmeg
3 bananas ( ripe or very mushy ripe the better! )
1/2 cup white sugar ( I use coconut sugar )
1/3 cup butter, melted
1/4 cup packed brown sugar
1 egg
1 tsp pure vanilla extra
1/4 cup chopped walnuts ( optional but yummy brother, just add them. )
- Set oven to 350 ( before you start whipping it up brother! or else you will begin to bake them in a temperature that isn’t proper! ) Grease or line your muffin tin ( I use cupcake liners, super easy clean up ) You can use a muffin tin that has 12 or half of that twice, whichever is available to you it works, you will end up having 2 separate batches to bake is all.
- Add flour, baking powder & soda, cinnamon, salt, & nutmeg together in a small bowl. Whisk together. Set Aside. Note – you should totally add cinnamon and nutmeg as you like! Measure with your heart, and it will 10/10 taste better sweetheart
- Get a large bowl and mash the bananas together with a potato masher ( easier ) or a fork. Honestly use what you can find in your kitchen girl, I get it! Then once done, add white & brown sugar ( coconut & brown is what I do once again! Same measurements as above ^ ), melted butter, egg, and vanilla extract. Mix until just combined. ( do not add your piping hot microwaved butter immediately, yes you. Wait for it to be just hot at least. ) Brother WAIT!! Add your walnuts too.
- Scoop even amounts into your prepped tin with liners or grease ( butter, crisco, etc. )
- Bake in oven until toothpick or knife comes clean in center of a middle muffin. About 25 – 40 min depending on your oven and quantity. Mine run around 30-40 min but check for your sake at 20 then go from there. Thankkks! Your overcooked muffins are not on my hands sister.
- Enjoy once the knife or toothpick comes clean and of course smother salted butter all over that bad boy!! MMMMMMMMMMMMMM YUM

- My batch usually yields around 7 muffins. I use a small ice cream scoop for my portions and do 2 per cup, which is probably why it results in a double cook time. Learn from my mistakes, brother and sisters… aaaaaaaaHHA
- They are still FIREEEE! Using the substitutes I mentioned ( coconut sugar, gluten-free 1-1 baking flour) makes me not feel terrible vs processed, not very healthy, unnatural ingredients. But you do as the Lord convicts you to, sister.
- This is a great recipe for little ones, your family, or breakfast, which I particularly like. It makes a nice light treat after a meal, too!
